We test each pizza oven over a few weeks, using the homemade dough (Adrienne likes Classic Ooni pizza dough recipe), fresh pasta balls procured by local pizzerias, fresh pasta purchased in the shop and frozen pizzas. We use infrared thermometers to make sure that the cooking surface temperature is coherent (and this is what the thermometer stormed says). Where pertinent, we also check the thermometers integrated on each oven against our environmental thermometers.
Pizza ovens are also a little more versatile than you might think. Over years of testing, Adrienne has used her pizza ovens to burn steaks, quick cooking salmon and panoramic broccoli. Matthew has fried air wings in a pizza oven, grilled pork ribs, charred asparagus and blackened chicken.
But over the years, I have accumulated some suggestions for those of you who find that making a pizza is a little embarrassing or intimidating.
